FYI got the two probe one today and temps were off 10-15 degrees. There doesn't seem to be any calibration option, but there was a firmware update which appears to have fixed it. Haven't tested it...

As far as app safety goes, I would always choose bluetooth over WIFI. It always bothers me when an app needs access to my WIFI password. Bluetooth doesn't have that problem.

Not true (entirely). Some Apps ask you to select/enter your WiFi SSID and enter password in order to provision the device on your WiFi. For example.. smart devices (lights, robot vacuums, etc.).
