If you feel like it's going to flex if you put some weight behind it, then it's not good. There's obviously room for flexible knives, just not in this space.

Yes. The Wusthof is the crappy one. The 8" serrated chef's knife from Henckels is the one I really like and thought this Wusthof was going to be something similar since they call it a "deli knife"...

Don’t buy expensive serrated knives. You can’t sharpen them so after a while it’s no better than a $2 Walmart knife. I can buy 35 cheap serrated knives for $70.

I'm not a fan of serrated knives, but it can be used in almost any situation a flat blade can be used. They're good for slicing bread and carving meat. Not so good for chopping or slicing vegetables....
