If you feel like it's going to flex if you put some weight behind it, then it's not good. There's obviously room for flexible knives, just not in this space.

Yes. The Wusthof is the crappy one. The 8" serrated chef's knife from Henckels is the one I really like and thought this Wusthof was going to be something similar since they call it a "deli knife"...

Never mind what I said. That knife was just delivered and it's nothing like the Henckels. It's basically a regular bread knife, just shaped differently. It's about 50% lighter than the Henckels...

Yeah, I know quality knives require maintenance. I have an 8” Wüsthof chef knife, a Gyuto, and several nakiris. I hand sharpen them on my King whetstone. But you can’t do that with a serrated knife....

This is wrong, you give advice without knowing what you are talking about. You can sharpen them. They sell a tool just for this and it takes maybe 2 minutes
