We have a Blackstone without a hood and regretted it because dirt blows onto the griddle surface.

I only use my hood when I'm not cooking for storing. My mom has one without a hood and we had to buy a hood and it wasn't cheap.

Even though they are benefits if a good you can always just get a SS grill cover. I think blackstone even sells one.

The manuals recommend not covering for more than a few minutes while cooking, even with the hooded omnivore model, to avoid warping. To answer your question you could melt cheese on a burger faster...

Don't get this. Get the one with a hood that you can use while cooking, this one is not rated for cooking (cover while cooking)
