Don't let the fru-fru name scare you, they are top notch and oem maker for other top brand's upper end PSU, like EVGA, etc.
Just like back in the day, nobody heard of Asus, but they made alot of top notch laptops for other well-recognized brands..

A 750W PSU like this one should be good for any GPU right through an RTX3090.

Is this enough for a beefy processor and graphics card? Assuming up to 150w for processor ? I'm not sure how many W for graphics card

Should be for most but I went with an 850 because 5 years ago I thought 650 was all I would need. I didn't think the GPUs would get more power hungry so I don't want to buy more PSU later. But now that I think about it, I should've went 1000.

Does this have automatic Eco-Mode? I've heard stories of some psu's Eco-mode turning on when it's not supposed to and then there's no way to turn it off

It's not automatic. There is a toggle switch to turn on the fan/Eco-mode.
