The games themselves hold up, but this is generally considered a lazy port that doesn't take advantage of the current gen consoles.
Basically, my copy of the HD collection from 2011 run on my Series X at the same internal resolution with better optimized visuals from Microsoft's backwards compatibility program from a few years ago

Do these games age well or is there lots of padding / QOL missing?

I bought this right after it came out. It was good enough for me. A lazy port? Sure. I didn't need anything more than that, though. I just wanted to play all of these again, on PS5. MGS 2 & 3 run at 60fps (as they should, but I only specify they do since the Switch version of this is 30fps), and they're the Substance and Subsistence versions of the games. It also has the first two super old school Metal Gear (not Metal Gear Solid) games, if that's your thing. If you're not picky (not that I blame anyone for being picky on this), then this collection is great. The games run really well and I didn't encounter any bugs in my playthrough.
I've said it before, I'll say it again. This is just another Konami cash grab. I don't care if this slop job drops to a penny, I'll pirate it or go without. Any real fan already has all of the [canon] games either in the Legacy Collection & MGSV or in their original form with appropriate consoles. Or you're like me and have both. The only reason I was remotely excited for this (Vol. 2) was to finally see MGS4 unshackled from the PS3. I have not, and will never again give a cent to the scumbags at Konami after MGSV was cut short. You all should do the same until THEY can prove to US that they can do the series justice with remakes/ports. Until then, if you buy this pathetic excuse of a lazy port job, all you're doing is telling them "please keep giving us more of this crap." Most MGS fans would agree that it's better to let the series die and RIP without Kojima than let Konami drag their nuts over Kojima's legacy more than they already have (looking at you Survive).

Amazing games, lazy port that actually looks worse than the original in some places. For an example of how much effort they put into this, when this collection first came out on Steam, buyers found their list of games to include METAL GEAR SOLID MASTER COLLECTION listed multiple times, with no way to tell which one launched which game.
They did fix that, but it goes to show how little Konami cared about doing a good job with this. Some background music is missing, there's 8 way movement instead of analog, MGS1 still runs at 240p and 30 fps.
That being said, most players won't care. It's MGS, it's available on modern equipment so you don't have to find an old console to play them, and that's good enough.

the game looks better on emulation than this port.
