I know my friend was after the Paladea Evolved set because of a few cards he wants, but why are those priced like $10 higher than the rest?!
If you want the best pulls 151, crown zenith are my favorites.
If you have kids I make my kids do chores and give them cards instead of money and get the fun of opening with them so it's a win win I just am careful about which sets I buy because some of them kinda suck. I suggest watching videos of the chase cards and seeing what ones you want the most.

Usually when I buy English sealed product online it's at Target, Best Buy, Zulus, or Pokemon Center. I also have a very good local card shop that has a wide selection at very good prices.
For Japanese there is Mecca Japan, Plaza Japan and a few others. Although depending on the set Japanese prices are crazy right now.
A new site that was recommended to me is Sakuras Card Shop. Prices are good and my friend swears by them. Apparently some Twitch Pokemon card streamers use/promote them as well.

As for which sets to open/collect:
151 and Ruler Black Flame (Japanese) although the prices are kind of high. They're both getting a reprint which should bring down prices some. If the price is off-putting, look into buying singles on eBay, TCGPlayer, etc.
Lost Origin is fun as well. Really any Scarlet & Violet (S&V) set except Paradox Rift! The earlier S&V sets are all fun, lots of hits and amazing beautiful cards.

All sv sets are pretty trash.... Only 151 is worth anything.

For paldean fates sure. But there are tons of other deals that has packs cheaper bb frequently has sleeved boosters for 3 dollars.
