Apple doesn't do touch screens, though, and you can't upgrade the SSD so you end up spending huge money. I've got 4TB SSD, touch, and 4k+ on my XPS, all of which take some extra power. 32GB of ram too. Oh, and the screen gets super bright.
The touch button F row is not an issue for me. I'm fine with it.
I've had good luck calling the 1800 number when parts are missing. They usually offer a refund or store credit to keep the item. In store is very hit or miss. I've had a manager refund $300 for missing parts on an open box excellent TV missing all parts but then others who won't budge $15 for a missing charger on a laptop.
Sounds like a lot of hassle. It's entirely up to you, but I value my time and stress level....especially over something like a laptop where it's not an insignificant cash outlay.
Not sure if this is a good deal. Asus Zenbooks with similar specs can be had for $700 brand new. You are paying $300 more to get additional 16gb RAM, and having to play the open box lottery. Not a good deal IMHO
I have been happy with mine. I have tried to like MacBooks, but cannot get used to MacOS. This is MacBook Air quality, and honestly just as fast.

Also make sure you get the headphones adapter in the box. Mine had it, but if you don't have it, you cannot use a standard USB-C to headphone adapter with this thing.
Open-box items can be previously purchased and returned, or possibly a floor model. You would have to see the exact item you are purchasing to know the condition. Some items are basically brand new, others can show signs of wear.
My xps plus 13. The other day I plugged it in to charge. 2 days later I realize it was ON. Screen on even though the lid was closed. WTH The machine was super hot but was fine. I shut it down manually.
