From this thread it would seem I could connect these to the V2 wifi hub for remote access?

Yes its actually very nice, i have the water sensor, thermometer and some rope lights. All integrated into the app
The device should still be able to connect to HA running on an rpi with the proper services installed though, as long as you don't expect too much from the signal strength. But both the BT dongle and esp were <$10 each, and work on more than just this device.
Also be aware that Govee has two HA services - "Govee" and "Govee Bluetooth". You'll need the Bluetooth service set up as in addition to the rpi's standard "Bluetooth" service setup.
You are right. The gateway that comes with thermo hygrometer package is H5151 and the one comes with the water leak package is H5043. H5043 is larger and does work with thermo hygrometer sensors (H5100 and H5104 for sure) as well as water leak sensors (H5058). It can also handle a lot more sensors (up to 100?, vs 10 sensors for H5151). H5151 can't detect water leak sensors (H5058), and it looks much smaller then H5043. I have all of the above-mentioned gateways and sensors, and have played with them.

One thing to note this is BT only and no WiFi so it does not show up on my Home app via homebridge on my raspberry pi. If you would like to see the temp of your home (if you have a hub) you need a model with WiFi.
I have been using one similar to this with one sensor but the one with three is much more informative.
On screen I see. Outdoor temp. Basement temp. Garage temperature.
I would have thought it would be something common, but it's not.
