I am currently rocking this combo from about a month ago. Great deal on a really mid range setup, with case, Rx6500xt, and M.2 drive I am at about $550 all in. I did have a DOA stick of RAM though, but still very happy with my new budget Zwift machine!

If this was a 12600K instead of the KF, it would be an incredible Plex/Blue Iris starter pack. As it is, it's still an incredible deal for people looking to build a budget PC.

Im not the one you asked, but I just built something similar. I5-12600KF, WD-SN850X 2TB SSD M2 Drive, MSI MAG B760 Motherboard, Corsair RM 850x 850 Watt power supply and Corsair DDR 5 6000 CL30 32GB Ram. Already had a case with a bunch of fans. Booted up with no problems after putting it together. Runs perfectly. Currently still have my old GTX 1070 card in there, still waiting on a good deal on a new graphics card. Even with the old graphics card it's really impressive.

You can still run it headless and have more power than needed.

Most people really don't need transcoding capability for every stream, especially if they're viewing from the same network. They just need decent bandwidth.

I would throw Proxmox on it and toss Plex in a container. Add a container for Openmediavault and you have Plex and a NAS all on one machine.

Never a fan of the intel bundles, I'm glad that intel got competition so they stopped with the 1% improvement for $300 nonsense they were doing but since they keep changing the socket of their cpus it makes almost every upgrade $200-300 more than it needs to be.

Actually you can use the 12th gen socket with 13, and even 14th gen. This time their not jumping sockets every year. 15th gen is gonna be new socket though

The Ram should have lifetime warranty or something like that just contact G.Skill and they should replace it for you without any extra cost other then maybe sending in the back stick.

This. Also, that CPU is plenty to do a few (or more) transcodes in software.
