I have the 14" pan (or 13.5 that they call it now) and the 22" pan. Both are nearly flat with dimples all over the bottom. The 22" is huge, and it fits over 2 burners and works well if using gas. ...

Yes. To make it authentic, we use wood fire, usually 50yr+ white oak that has been cut down fresh within 5 days and then fine processed to 1x1 blocks on a gas powered Frestool saw.

I have this, it's thin. Thin carbon steel will warp over time and will not work well w induction. Agree w others, go for a thicker carbon steel.

If you season it properly it is nearly as good as the best non stick pans. But if you don't. It is a mess. Watch you tube videos on seasoning carbon steel pans.
