"High Carbon" is generally considered .55 or above carbon content. I'm guessing these knives are 440a, which are above .55.

I personally prefer stamped knives. They tend to be thinner. The best cutters, the lightsabers, tend to be stamped (outside high end hand forged). I especially hate forged knives with full height...
