What's your favorite Christmas cookie?

19,213 2,792 December 1, 2008 at 02:48 PM in Grocery
I'm always on the lookout for new recipies - what is your family's favorite Christmas cookie?

My family goes nuts over spritz. I'm only allowed to make trees and the flower with a red hot in the center. I do a batch with splenda for my mom and call them Festivus cookies. Coverlaugh

I use an electric press for these. I'd be lost without it - I probably make 6 batches over Christmas.

Joy of Cooking Spritz

Makes about 5 dozen 2" cookies

Beat on medium speed until very fluffy and well blended:

1/2 lb (2 sticks) unsalted butter, softened
3/4 cup sugar

Add and beat until well combined:

2 large egg yolks
1/4 tsp salt
1 1/2 tsp vanilla
3/4 tsp almond extract

Sift over the top and stir in until well blended and smooth:

2 1/4 cups all purpose flour

To press the cookies:

If the dough seems soft and difficult to handle, stir in 1 to 2 tbs flour. Cover and refrigerate until slightly stiff but not at all hard, 30-40 minutes.

Position a rack in the upper third of the oven. Preheat to 350.

Press out the cookies leaving about an inch between them. Decorate as desired and bake 1 sheet at a time for 9-12 minutes. Remove the pan and let stand for a few minutes before removing cookies to a rack to cool.

Ok, I have cookies and peppermint park in the treats boxes for DH's coworkers. I think I need something salty or spicy to offset all the sugar. Any suggestions for a Christmas treat that isn't sweet?

Maybe reindeer chow? A salty/sweet mix.

I think I will grab a few of these and make gifts this year for friends.

I'm making these this year:

I'm going to change the directions, though. Instead of 2 T water, 1 T vanilla and 1 T water. I'm going to use M&Ms instead of chocolate chips, too. They're yummy!

Outside of Christmas, this is usually my recipe. DD will be 3 this month and loves to "help" me cook, bake, decorate, etc. I open the package, let her dip them in colored sugar, and bake. It makes her farking day and takes all of 10 minutes to get in the oven. I picked her up from pre-k on Friday and a little girl in her class yelled "There is Zoe's mom, I want to go make cookies, too!" heart

really? I am feeling a little doubtful about cookies made from chow mein noodles. And I don't own a microwave! EEK! Maybe I should make the chocolate covered bacon. Wink
