Amazon is offering Mercer Culinary High Carbon Japanese Stainless Steel Knives (X30 Cr13) for pretty low prices, most of them under $10. These are about 30% off their normal prices and comparable to Victorinox, which seem to never get discounted significantly. At under $10 for a decent quality knife from a good name-brand it seems like a safe bet.

These all have a white polypropylene handles, NSF certified and carrry a limited Lifetime warranty, and of course high carbon stainless steel.

culinary school grad and red seal chef in Canada, worked as one for a dozen years.

Went thru a expensive knife stage, then figured out that victorinox held edge better, were lighter (which matters when using a knife for 6-12 hrs a day (chef life), cheaper and the thinner blade was much easier in use than the thick drop forged knives. Plus folks were less likely to steal them.

Expensive knives are for people that are trying to impress with equipment solutions for skills problems, I impress people when the food is seen, smelled and hits the palette.

Thanks, bought one of each. I've never heard of this brand, but I'm a huge fan of the Victorinox knives. After reading the reviews of these knives, I'm hoping for a similar experience.

Take a look at most restaurants, you'll very likely see a knife that looks exactly like this: "plastic" handle of various colors. There's a reason for it.

Because it's cheap. If you're talking food service, the house knives will be like this because they're good enough and cheap. Knives go missing all the time. Most real cooks and chefs in restaurants bring their own knives, usually Wusthof, Henkels or Globals if they fancy.

That said, this is probably better than whatever you can buy at Walmart or Target.

My wife is in the business too and each chef has their own set of knives, each costing hundreds of dollars. Not sure which restaurants you're referring to, but if they're using $10 knives that says a lot.. Knives are investment pieces and fall under the "you get what you pay for" idea. A good knife will last you a lifetime
