i5 CPU very solid and the fan runs quiet on this gen.

I would not recommend i7, the fan is going to blow hard.
It is $309.99 at B&H, so for people in California and other states where they don't pay sales tax at B&H it is a better deal.
Yes, the Intel Bean Canyon NUC i5 BOXNUC8i5BEK1 has an Intel Core i5-8259U (quad-core 2.3 Ghz which can turbo to 3.8 Ghz) will be sufficient for light video editing. I have an Intel NUC7i5BNH which has an Intel Core i5-7260U (dual-core 2.2 Ghz which can turbo to 3.4 Ghz) and it's sufficient for light video editing.

The difference between to BOXNUC8i5BEK1 and the BOXNUC8i7BEH1 is that the BOXNUC8i5BEK1 has an Intel Core i5-8259U (quad-core 2.3 Ghz -> 3.8 Ghz) and the case does not have room for an additional 2.5" drive, while the BOXNUC8i7BEH1 has an Intel Core i7-8559U (quad-core 2.7 Ghz -> 4.5 Ghz) and is taller, so you can also install a 2.5" drive in addition to the M.2 SSD.

I am on the fence, need more feed back. Trying to replace my 6 yr old desk top and want something smaller. Is this worth getting, is it really fast and can handle light video editing?

You are going to want to check the reviews on the processor used. If memory serves, the onboard graphics on 8th gen is actually a slight step back from 7th gen. Something about the Iris vs. Intel 620. Sorry I can't be more specific.

This experienced NUC reviewer disagrees on the fan noise...

Yes there is but it depends upon a person's tolerance.

i7 gain over i5 is not that much (10%-15%) but you pay much more.

i7 will always throttle anyway.

If you need that much power, I would just get a six core setup.

People who buy this wants the smallest size to VESA mount on the back of a monitor so its hidden.

Looking at the I5

It has the same cpu as the latest 13 inch Macbook Pro. However, this thing runs hot. I'm not sure if it can handle very heavy duties. I have one and I hackintoshed it. It works like a dream.
