Which one would be best for a man with high arches?

Most of the time when my feet are sore, it's almost exclusively in the arch area, so I'm hoping for something to help with this

You should see a podiatrist.

I would say the work insoles would be best, given their arch construction. Next would be the Tri-Comfort.

Everybody is different but these didn't do much on their own for plantar fasciitis. The only thing that helped me was finding a combination of correct orthotic for my arch on the bottom and a soft insole or orthotic on top. Both of those inside a comfortable and stable shoe that doesn't allow my foot to slide around. It was a lot of trial and error but now I can travel and hike long distances without limping after a mile.

I use superfeet, the blue or the orange. But my wife really likes the ones from "the walking company". I'm going to try those next. I used to have custom cast orthotics, but have been happy with the superfeet for about 12 years now.

Podiatrist don't do jack squat for plantar fasciitis. They're about as useful as physical therapists and chiropractors.
Physical therapists are actually useful, but it's hard to find good ones (just like you can end up with even medical doctors that aren't great). I agree with you that a podiatrist might not be helpful in this case though. They need to figure out if his plantar fasciitis is secondary to an isolated incident (e.g. injury), structural issues (soft tissue anomaly), and/or problematic biomechanism. Depending on the cause(s), solutions also differ.
