I am looking to replace the hf 'welding table' linked earlier it is okay for light duty projects but if you are trying to keep anything square while welding it will just bend. It probably has 16ish gauge top.
If you look at your steel recycling place you can generally find large pieces for a table as well as legs for relatively cheap. My guy generally charges 10 cents a pound but it is just whatever they have laying around.

Classic chicken/egg problem. If you don't already have a table, what do you build your table on?!

As far as materials go I'm really holding out for a nice 1in thick plate for the top. I have some 0.5in, but an inch will make for a much truer surface that will take plenty of abuse. All of the professional welding shops I know of either use thick plate or heavy slats (generally both with the slats used for the cutting table). Sure it's not cheap, but if you're resourceful and patient you can save a lot and end up with something that will take a beating and still be serviceable for the grandkids.
