Restrictive airflow can cause your blower motor to over heat if it's a standard, non ECM motor (1 speed heat, 1 speed cooling). If it's an ECM motor the motor may possibly speed up costing you more money and still have overheating/tripping on thermals issues. On the heat side you can start to trip the high limit cycling your heat off and on. On the cooling side you could ice up the coil and possibly slug the compressor with liquid.
If you notice a huge difference from a MERV 8 to 11 in airflow stick with a MERV 8. Some people will comment shortly that a filter is only to protect the equipment, use a fiberglass filter etc. like they do in every thread on filters. Ignore them. Use a minimum MERV 8 pleated filter. If you have issues with a MERV 8 you've got duct work issues, dirty evaporator, dirty secondary heat exchanger, vents closed, lack of/dirty return vents.

The 3M MERV 12 & 13 filters have LESS restrictive airflow than their MERV 5, 7, & 11.
If you're wary of the manufacturer ratings here are tests done by the California Energy Commission confirming that the MERV 13 has the lowest airflow resistance of the bunch:

Get whatever you're comfortable spending for the amount of filtration you're looking for and ignore the outdated advice. I would however skip the black carbon filters if you have an older system because those actually are quite restrictive.

If you have a Menards by you they have good prices on the thicc filters
You can use a 4" (or even a 1" if you want) I've been using 4" filters for 15 years in my 5" housing
Higher number mean more filtration. Lower airflow though don't use in old houses. Merv8 is good for older houses.
Media filters... I need these too, but have yet to find any deals on any.
