Cooks Illustrated (an unbiased, no ads cooking/baking periodical) recently tested various vanilla extracts (real and imitation) and talked a lot about how they are both made.

In the end, they rated this Baker's Imitation Vanilla their favorite and #1 choice. We purchased one a couple days ago (93 cents and shipped free and arrived first thing the next morning...I love Amazon!), and made a yellow vanilla cake. Not only did this vanilla have a great smell, but the cake tasted great. We recently purchased (for $26) the Costco real Vanilla Extract and it smelled TERRIBLE. We took it back. I'll take 93 cents any day for a bottle of vanilla flavoring.

I use this to make pancakes and it's fine but for stuff like custard where the flavor of the vanilla would be more obvious I would use the real vanilla extract.

This is also imitation flavoring and not pure extract. Which is why it is so cheap. Extract is the expensive stuff.

While most people cant detect a difference in baked goods. If your actually looking for extract this is not it.

I am a professional baker and I use nothing but imitation vanilla. It taste as good or almost as good as pure extract, so all you snobs out there that are going to post that the pure vanilla extract is worth 20x the cost of the imitation, I defy you to tell the difference between two cakes that have a couple of teaspoons of imitation vs. pure extract.

imho, until vanilla prices go down you should save the real stuff for low temp things like custard, chocolate candies, ice cream, etc.

anything that's baked to a high temp is going to evaporate off a lot of the volatile compounds that you're paying extra for so you might as well just use the synthetic vanillin.
