It's a roughly faithful remake that looks good. 2.0-onwards starts to deviate from the original series (note that this is not inherently bad). 3.0 gets weird (possibly not in a good way*), and people are waiting for 3.0+1.0 (yeah, not 4.0) this summer to see if this experiment ends as a new thing, or a failure.

* as in, I wouldn't have any qualms about introducing somebody not well-versed in anime and new to NGE to the original series + end movies if they had the time... but I might have qualms about substituting the Rebuild series for the original series in that role based on how 3.0 went.

Watch the tv show first. Skip the recap movie, watch end of evangelion then watch these.

I used to wish shows I liked but had unsatisfying endings would get remade.
This series showed me how poorly that could go.

I thought it was great to the end of 2.0. Then they changed the scenery to some bizarre space fortress that somehow got built after the world (read: economies, industries, workforce) was decimated. *facepalm*

The surreal, eldritch horror that was effective in the original series only works when you keep it grounded to some version of a recognizable world.
