Please don't cut directly on top of your countertop, no matter the material. Cutting boards are cheap and replaceable.

True, but so many questions are poor. The original question, and the Formaldehyde question, feel like a back handed way to criticize the item. Why not just say that you think most have perpendicular grains, or you've heard that butcher blocks have a lot of Formaldehyde as opposed to other counter tops. Does the person really expect an answer in milliliters of formaldehyde per square inch. Just ask better questions folks, or better yet, just let the deal stand for itself if you don't like the product.

Yes indeed. A true butcher block is called "end grain" - the knives chop into the grain ever so slightly and then release, preserving both the wood and the knife blade. (Think of a knife going into the bristles of a brush...) Real end grain cutting boards are expensive, but worth every penny. I have decent size Catskill Craftsmen end- grain cutting board that has been in daily use for 15 years, and it could be mistaken for brand new after wiping with oil. No scars whatsoever.

However this post is for a counter top, called "butcher block" for the look - strips of wood. There are end-grain countertops as well, but they're super pricey.

It's a myth that plastic cutting boards are safer than wood. It is actually easier for bacteria to hide in plastic crevices - which can't be washed.

It's butcher block in a sense that the slab is made of lots of pieces of wood glued together

or not big enough... I'm building a desk that is 8ft long but i want more than 25 inches depth on it. I need a good way to put two of these together and cut it to 30inches

A circular/table saw plus wood glue and clamps would make that an easy project that looks great.

No, not hard to cut to size though. Just need a circular saw with a good blade.
