I am looking for a new gaming PC. I'm a Flight Sim and Racing type gamer. This looks like an amazing deal for a pre-built system. I haven't built a computer for gaming in 10+ years.
On the PC Parts Picker site the closest I can get (as the case isn't listed, memory isn't listed etc) is $1411 without Windows (yeah I know it's cheap on ebay).

The PowerSpec G434
ASRock Z390 Phantom Gaming 4S
PowerSpec/Lian Li ATX 205
Intel Core i7 9700KF
32GB DDR4-3600
1 TB PCIe NVMe M.2
Nvidia GeForce RTX 2700 Super
My question to those in the know...anything I should be concerned about with
this system [microcenter.com]?

I live near a Microcenter and purchased an open box G162 for $611 a couple weeks ago. I am not a gamer, using it for productivity. I could not find anything with similar specs for that price. Though there was an HP or two posted on here that were close, nothing proprietary in the Powespec.
Def overkill.
For the stuff you are describing a normal 500 or so PC will suffice. Try to
Maximize your HD space and memory. This CPU and GPU it's not something needed for those task.

In other words would a $600 pc potentially perform better for office use ?

It won't be better.
Is about it being enough and efficient/cost effective.
The GPU alone on this PC is worth $500, there's no need for such expense or processing power being using office suite.
A normal built in GPU will be enough.
Will this PC do it faster...maybe. I doubt you be able to tell depending on what you are doing. But at the price you would pay for it is not worth it.
Depends on your budget. Yes it's overkill. But you will know 100 percent you will have no hiccups for what ever you throw at it. Will you eventually get into video editing or anything in the coming future? Just make sure whatever you purchase will do what you need it to do now and two years or so into the future. Just my opinion!

Would you guys recommend this or the cyber power from bestbuy? Primarily just for gaming and home office use along with an Acer x34p
How the heck did you do that. Was it missing components? How is the PC treating ya?
