Quarantine Food

Thought we could share what we're eating and exchange ideas. This was my menu for the week:

Peanut butter & jelly sandwiches with chips or fruit
Chicken tarragon, red potatoes, green beans
Garlic lemon shrimp pasta with broccoli, bread
Soup, bread
Eggs, pancakes
Black olive, mushroom, onion homemade pizza, salad
Turkey sandwich, chips
Soft tacos, tater tots
Spaghetti, green beans, garlic bread
Key lime pie, yogurt with fresh fruit, or pumpkin bread

I try to keep basic ingredients around and choose meals to make from a specific list each week.

When not out for the take out:
Lean Cuisine microwave meals
(Lower sodium good).
Spinach dip + Ritz crackers
Potstickers (easy to keep on hand frozen)
Canned fruit
Rice + canned Bush's beans, tuna, fish.
Shelf stable tofu
Spinach
Tillamook ice cream

BTW you are not in quarantine unless you have the virus or as suspected of having it. Being told to stay home is not the same as "quarantine", it's just isolation.

I make my own pizzas. Probably have 2 cases of pizza sauce, and individual packages of pizza dough mix, plenty of olive oil, and mozzarella. I use a cast iron griddle, then under the broiler for 7 minutes. Change the toppings up also. Then I have plenty of Chicken, eggs, and frozen veggies. I had a whole giant bag of coconut i was going to use in some trail mix i have most days, but didn't really like it so i googled how to make macaroons...wow, then things are good. I like to have a kale pineapple, banana , yougert smoothie, but I will have to reup on those ingredients every 3-4 weeks if i wanna keep having those. Milk will be a problem if things get crazy.

Have you tried shelf stable milk? it still seems to be readily available. I grabbed some at Dollar Tree today and Kroger had some as well.

I googled it. If I was desperate i might try it. I think my strategy will be to drop in winndixie a half hr before they close . Less chance of it being crowded

it's honestly not that bad. I live in a hurricane prone area, so certain shelf stable products are always in my kitchen. It comes in chocolate, too Smilie And of course there are your soy and almond milk varieties as well.

I can't think more than a day when it comes to cooking, most times it's one meal at a time.

Last night:
- White Rice
- Eggplants
- Lentil Soup

Breakfast:
- Coffee
- Toast with peanut buter

Not necessarily related to the current Corona crisis but I pressure canned nine pounds of grass-fed ground beef and four pounds of ground bison yesterday.

DW will be dry canning some stuff today or tomorrow.
Looks like you and her have almost the same pressure canner.
Her's is a stove top version.
