Be aware that natural almond oil can contain meaningful levels of cyanide, especially old almond oil. I am a pre medical student and biologist and had a tenured professor of organic chemistry break topic once to tell us to never use natural almond oil, for this reason.

So do cherries and pitted fruits... the pits do. Trace amounts. So before you freak people out.... how much almond extract would one have to consume in an hour to be toxic? Several bottles?

I just looked it up because you're absolutely 100% correct to mention this.

"For perspective, a typical serving size of almonds is 1 ounce or 23 kernels, and 1 kilogram is equal to 35 ounces. The lethal dose of cyanide is 0.5 to 3.5 milligrams per kilogram of body weight. If you weigh 160 pounds, for the minimum lethal dose, you would need to eat 50 ounces of almonds or 1,150 kernels in one day to get the amount of cyanide from almonds necessary to be poisoned."

We're talking almond extract here, so highly concentrated.

Apparently, the imitation is just as good (unlike vanilla), so why risk it?
