Okay this is my first time using it, and I'm thoroughly impressed. I don't have a smart TV and this linked up with all my smart displays. My toddlers already figured out how to use it within 10 minutes lol. I love it.

If you're simply casting your entire phone screen that's how it works, but if you're casting from an actual app you can start playback with your phone and then turn your phone off if you want. A lot of TV's can even control pause/play with the TV remote.

So initial request must be made from phone to Chromecast and thereafter Chromecast device which is connected to tv as well as directly to WiFi performs download and play on tv (with few TV's supporting with there own remote functions like pause play etc or using Chromecast app from phone). Is this correct?
Also will mini be able to audio out instead of tv ? Or that's just separate to speak to and listen function nothing to do with tv and Chromecast?

Yea that's basically it. You can control playback with your phone with whatever app you're casting from, or with the TV remote if your TV supports HDMI-CEC and it's turned on (manufacturers usually have some special name for HDMI-CEC).
You can't cast the video to a TV and the sound to the Mini (probably wouldn't want to anyway), but you can tell the Mini to cast certain things to the TV through the Chromecast. I tell my Mini to play different YouTube videos on the TV (through my Chromecast), and it'll turn the TV on, switch to the right input, and start playing.
You can also cast music/podcasts to the Mini and listen through that.
Picture looks like it's 3rd gen Chromecast.
Doesn't look like. 4k HDR supporting Chromecast has G written on lower side of device where as older (1080p ?) has G embossed on center area as per picture on this deal.

3rd gen, non ultra 1080p. So you'll get the newer Wi-Fi chip which is nice.
