I was just at the local Costco and saw that the beef tenderloin filet mignon is $9.99/lb. One of the workers at the meat department said that he doesn't know why it is so cheap, but it's currently selling for that price (no coupons, special mark downs, etc.)

Didn't pick up - yesterday selection wasn't pretty.
Did grab some prime ribeye though. Delicious.

Whats the best way to feast like a intergalactic-time-dimension king on these?

A French guy I once knew liked his steak tartare...vomit

(I presume he preferred Horse meat)

These kids never had sous vide. LOL. When it comes to cooking the French owns the American and any other country in the world.
I prefer the layers of flavor you get from a smoker over a sous vide.

Start in the sous vide, finish in the pan. 5* restaurant.
Finish with a torch, it's even better.

That's expensive. In San Diego, you can pick up Beef Tenderloin at a local restaurant supply for $4.90/lb. I picked up several packs for friends and family last week. I grilled half and made medium are shaking beef from the other half.
Where in San Diego? I gotta check it out

Not sure if it's the case today but Costco stated at one time all of their meats were blade tenderized EXCEPT for flank steaks and filets.
Last time I bought a prime strip loin the label didn't mention that like some of their other meats. So I was either misled or not all of their meat is blade tenderized. That was a couple years ago. And I didn't see it on the brisket I almost bought last week.

We always cook the tenderloin as a roast. I can control the "doneness" better that way than if I cut it into Filets.

Do you wrap it in bacon ?

This topic gets mentioned regularly on the Costco Reddit, where Costco butchers have replied that they tenderize all prepared packages (cello-wrapped) except flank and filet, and all plastic/bulk packs are NOT tenderized, so that whole brisket would not be tenderized. They also say they sterilize the tool every day.
