FYI, they've released a 8GB model.
Based on lots of reviews watched on YouTube, 2gb is sufficient for the more common uses of the pi (ad blocking, plex server, emulation). I picked up a 2gb for my plex & n64 gaming and it's fine. However, if you want to use this as your daily web browser, you'd definitely want to get more ram.
It depends on the amount of simultaneously running element you have. If you are looking for a retro gaming system only, 2 is fine, octoprint for 3d printing, 2 in five (this model might even be overkill for that), but if you want a mini desktop running at the same time or multiple services, then the more gigs the better.
