Not bashing this deal because I bought the 2TB at $235, but...
I was promised real deals on RAM and flash due to a production glut. When do those start?

1. the overproduction, while probably true, was also probably exaggerated by the media.
2. because nand and ram are so widely used, i'd imagine retailers aren't too eager to dump them in a fire sale. people are buying pcs now more than ever, so supply vs demand probably isn't too imbalanced.
3. prices have been going down, albeit slowly. i believe that the prices are still in a downward trajectory, and we'll continue to see drops in prices - especially with 2.5" sata drives and pcie gen 3 drives, as more enthusiasts are flocking toward pcie gen 4 drives (whether most would actually benefit from that is another story).

Black Friday?

I know nothing about the industry but with Tiger lake out and Nvidia GeForce RTX 3000s out I figure prices are holding for people who want to build with the new stuff?

This is noticeably better than most of the entry level drives that have been posted around this price (WD SN550/Sabrent RocketQ/Kingston A2000/Crucial P1). An SX8200 is much more comparable to HP 950/WD SN750 which hover more closely to $130.

If my laptop uses the SATA style m.2, will this still work (albeit at a slower speed)?

I thought I've seen the 750 black for $115 or less a few times the last month or so. Maybe I'm wrong
