Here is what i use them for:
Pros:
You dont have to measure and cut a sheet out to fit your tray and you don't have to deal with a rolled up sheet and have to keep on flattening it out on your tray
can use it for baking cookies, cake liner, pie line, meat or veggies liner, etc in the oven
can cut holes into it and use it as a steamer liner if you were to steam dumplings on the stove with a double boiler steamer pot so your dumplings doesnt stick to your pot
you can use it to meal prep your sandwiches or baguettes
you can use it to marinate meats, like fish and wrap it up in the parchment paper
you can cut them into squares and stack your homemade burger patties in layers when you marinade them
you can use the parchment paper as a liner when you iron your perler bead designs so the plastic on the perler beads dont melt into your iron
Cons that I have experienced:
dont use in the toaster oven, paper will get toasty/burnt color
dont use in the oven over 400F, paper will get toasty/burnt color
double check the size you buy and the size of your tray

I buy parchment sheets on Amazon in bulk. You can get a few hundred sheets for like $12. They're pre-cut and they are in a flat package.
Stuff doesn't stick to it, so you don't have to grease a cookie sheet or wash one.
Don't put it in an air fryer unless you want to start a fire.
