I have done all... atx, matx, and itx. Matx are usually the cheapest, then atx, then itx... then high end atx. If it doesn't fit in the case, it might not be the form factor for you. For low noise, I go with itx... less stuff able to plug, so less stuff needed to cool (crazy people go for 3950x and 3090 in an itx case). For cheapest, I go with matx. For x8 x8 x4, I go with atx.
Matx here, and I've not regretted it for the last 7 years.
Just depends on what you want to do with it. I like the compact case, only have a couple expansion boards, and don't need more than 4 SATA ports.
To each their own, probably going ITX next.
I am building my second MATX. I love the form factor because it fits nicely on the desk instead of needing to put in on the floor. I want to do an ITX at some point but the price and availability of SFX power supplies has kept me from trying one so far.

the 2 pcs i've built were matx and i regret not going atx every time from the start.
