How difficult is this game? My 6yo is REALLY into Phantom Menace right now and wonder if she'd be able to play this (she's never played a console game before)

I'm assuming not. The Microsoft store states "The classic racer is back with modernized controls and achievements!". I'm not seeing it reference anything about updated graphics.
