It looks like both male ends of that splitter have 4 pins. Shouldn't one only have 3 so the motherboard doesn't receive double the RPM reading with two fans connected?

I'm not sure of what exactly you are referring to, but a wire is a wire. If the connectors fit, but you want to remove a monitoring wiring, just remove the pin. The PSU cannot react to something which isn't there. If the monitoring pin is used to adjust level of power to control fan speed, it's going to run at full speed, since there is no signal, but there is full power.

How does this work with those fancy RGB fans? Does the RGB control have nothing to do with the connection to the fan power source? Just curious because I have no idea how they work when being installed and wanting the light show. I have a 14yr old, so I should probably learn this stuff right now.

I ordered the 3 way splitters from them recently and just opened one last night. Only 1 of the male ends has 4 pins, the rest have 3. Can't guarantee it's the same for these but I'm not sure why it would be different.
