Very sharp knife, but incredibly delicate and brittle. My first one somehow chipped just slicing an apple. I probably wouldn't buy one again.

Not the lowest price ever according to CCC, but still a good deal on outstanding ceramic knives. I use this santoku the most of all my knives (almost daily), and despite the couple small chips it has, it's as sharp as day one. It's important to only use these on a cutting board (not glass), and never on ceramic plates, glass, or countertops.

For the chips I'm planning on sending it off to Kyocera's authorized vendor.

Highly recommended!

The ceramic material is a double edged sword; Hardness lends to a long lived sharp edge, but that edge will chip rather than wear or bend if you apply excessive force. In other words, you can't use this for smashing garlic, breaking down squashes, or butchering frozen/boned meats. Otherwise, it's a very good specialty knife for people who are rather careful with their blades.

Personally, I haven't used this knife, but I do own a kyocera mandolin slicer that's as sharp as it was when I bought it over 10 years ago. It's also chipped in one spot (~1mm along the edge, but less than 1mm deep into the edge), but it doesn't seem to impact performance.

It's cool if you consider it disposable after several years. All knives dull (including this ceramic) but this is far outside the realm of owner sharpening. Once it dulls, your only reasonable option is to throw it away.

It's okay, but I don't notice it being any better than my KitchenAid ceramic knives, which cost about the same for a set of three.

Thats hooey. I have a sharpener and it works great. Have had my Kyocera knife for over 15 years with no problems. Still sharp and shparen it around every 5 years. I bought this shapener from amazon for like 30 bucks. Does ceramic knives no problem as well as serrated knives.

The people who break these knifes use it on bones, or try to pry apart frozen hamburger patties, etc. Their opinions should be discarded as they are using these knives for purposes the manufacturers TELL you not to use for.

For cutting vegetables and minimizing bruising of apples having no iron into them, they are fantastic knives and better than any steel knives on earth for this purpose.

I thought these knifes had a lifetime sharpening agreement with kyocera, but it seems like they don't offer that any more. But the sharpening service they refer to now [kyocera.com] just costs $12, so not really a total loss when it dulls.

Had one a few years ago. Used it for fruit and salad cutting daily. Gradually chipped in less than a year. Not worth paying for shipping although service is free. Just FYI
