1. follow me = doesn't work, not good for saving energy or anything for that matter

Long Read but worth It (trust me)
my current setup = ecobee 3 and 5 sensors setup with 2 extra incase any of the sensors go bad.
setup for me:
1. open all vents in house and install sensors where you think you might need them. start off with a min 3 sensors plus thermostat
2. cool house and check each sensors temp - reading should be + or - 1-2 degrees
3. in our case, thermostat is about 6 degrees or more colder that all other sensors and all other sensors read about 4 degrees off from each other.
4. any sensors that is reading more colder/hotter then current temperatures, adjust vents to restrict air flow to that room and test again.
5. repeat process until temps are close to each other or you get tired of testing and just give up.
6. if current temperatures cannot be close to each other, it's ok as time of day, sunlight, insulation will factor into room temp differences.
7. if on a separate level house (2 floors or more, set even temp per floor)
8. once everything is set up, let system stay the way it is, and test for the next couple of days to make sure temp on each sensor is to your satisfaction.
9. once done, continue to next steps.
setting up cooling comfort settings:
this is where it get's a little interesting as after the fist setup, most will leave it at that and say it's good, but you need to customize it a little more as different events will change our cooling needs.
if you leave this stock and set the temp on the thermostat, it will average all sensors and make the room with the most people hotter while making the other rooms ice cold.
Home, Sleep, Away, is the default settings but you need to add to this.
1. go to your comfort settings and tap on Home
2. set temp for home
3. under sensors, pick sensors that you want to be averaged in this comfort setting
4. save settings
5. add other settings depending on your needs and name them accordingly (kids Gaming, Visitors, Party)
doing it this way, you have full control of what sensors are averaged and not trapped by having the thermostat average all sensors.
yes it might not be a friendly way to do it as you have to change it depending on your needs, but at least you are only cooling the room your in and being comfortable at the same time.
we have this thermostat on google and just tell google to change it to the comfort setting we want
side note :
for the person that was asking about the auto fan on to help cool down the house without having the ac/heater on.
you can click on the setting and tap on the fan icon to turn it from auto to on or:
1. go to settings and then system
2. click on fan and enter a number from 0-60
3. what this setting does is turn on the in home fan, without turning on the ac/heater for x amount of min every hour.
this will have the internal fan cycle on and off every x amount of min every hour, even when your not home to circulate the air and try to prevent stale air inside your house.
hope this helps some, have ecobee and happy setup. it takes some time, but so worth it.

More specifically, can a smart thermostat control my HVAC and cool/warm only specific rooms only in order to save electricity?
Therefore, if you place sensors in the living room and also the bedroom, the HVAC unit will run until the remote sensor gets to the temperature you have programmed. If during daytime you want 72 degrees in the living room and you are in the living room, it will sense you are there and the unit will run until the remote sensor reaches 72 degrees. If both bedroom sensor and the living room sensors sense motion, the furnace will run to maintain an average of two temperature, that means that one area may be colder/ warmer than the other. Similarly at night time, when it senses you in the bedroom and no one in the living room, it will run HVAC to reach the programmed night temperature at the sensor location in your bedroom.
The only real way to save money is have a well insulated house with sufficient airflow everywhere.
The sensor sort of saves money by mire precisely controlling temperature where you want rather than guessing the temperature based upon the temperature set at the thermostat. In other words, my bedroom is generally 4 degrees cooler than the hallway, so I need to set the thermostat to 76 degrees is not the efficient way.

How exactly does it "adjust the temperature accordingly..."?
I get that it detects motion where the sensor is, but if it turns on the AC, wouldn't that cool the whole house. Am I reading that correctly or is it somehow cooling those rooms ("spaces") specifically?
