Hades is worth $60, much less $20. One of the best games of all time and one of the best of the last few years.

100% agree. These games are easily 10/10. If the look of these games interest you, then go for it without hesitation. I've poured a ridiculous amount of time into both of these.

I'm definitely interested in Hades, but I do not have a great understanding of what a roguelike is. Is there progression where you can save progress and continue to play, or do you start a new instance of the game every time you sit down to play or after every death?

It is more the latter you state. The game will autosave your progress if you leave in the middle of a dungeon run, but death or "completion" triggers a reset where you can increase stats or abilities.

Restart after every death but You upgrade your weapons and effects each restart.
