I really like the Harmy Despecialized Editions [youtube.com] and I know there are other similar projects to try and recreate the theatrical experience but with better upscaling, color-grading, etc.

I don't think iTunes is going to be selling fan made cuts.
I wish they would include the non SE as an extra at least but that's not happening anytime soon.

And I hate to be 'that guy' who says, be careful about digital "ownership." There are arguments by at least some of these platforms/vendors that you do NOT own the titles (even though that's the insinuation). You're just purchasing access rights to them as long as they make the titles available.
