Can confirm this works for multiple purchase. I purchased a single $99 shipt credit last night and added to my account via Shipt.com/redeem12. It even states when you go to redeem the card you can redeem it for "credit"

The email I received from target was "Good news! A Shipt $99 eGift eCard from order#xxxxxxxxx is here"
From there you click the "eCard" Center link in the email under the card picture and get the details from the card.
Then goto https://shipt.com/redeem12. It will ask you for your email. If you have an account registered use that email. Mine is the same as my target email I used to register on target.com.
IF you don't see the screen where you redeem your credit asking for your gift card number, cvv, and expiration data and it takes you directly into your account saying 0 Credit..DO NOT PANIC. lol hit your browsers back button and just enter your email again. Each time I've done this, the 2nd time entering the email has triggered the correct screen.
For me the target gift card emails for the $50 gift cards came exactly 10 minutes apart from the shipt eGift card email.




On my Shipt account I now show:
$297.00
Available Credit
And on Target.com

Per last year's deal, 1-2 GCs per day or every other day. Use shipt.com/redeem instead of the GC link.
By the way, it's not like Instacart is getting your groceries delivered for free. You either pay $99 for a membership (same as Shipt), or $3.99 every time you shop. So if you get groceries from Instacart at least twice a week, you are already paying them over $99.
Now, you may prefer Instacart's wider retailer selection--I certainly do! But it's plain incorrect to say that "it's like paying $99 for a $50 gift card" if you use the service (and if you don't, why are we even discussing this?!). A more accurate way to put it is that this makes the membership $49 as long as you shop at Target.
