If you don't want the blonde handle, the lowest the 8" classic has been was $93.84.

It's brittle because Shun did a crappy job heat treating VG-10/Max.

I have Shun Premiere knife and Global 8" chef Knife …. I thought Shun would be sharper, but My Global is my goto knife. Shun handle feels premium… but the blade feels…. Bit brittle.

Yeah I saw it for $99 last September and haven't seen it there since. Wondering if we ever get back down that far. Probably not. I'm fine with $119 for something I've wanted for a long time.

I have a handful of Shun knives, a German one with three guys icon, and 2 Globals. The knife I always reach for is the 10 inch Shun chef knife. Its the clear choice. Skip the others, as this is a lifetime purchase.

Your choice. A classic Japanese style knife used to slice fish for sushi and sashimi is sharpened on one side only. This gives straighter cuts on the fish. A knife that is sharpened on both sides will wander a bit when slicing creating a less than straight cut. That's the theory behind it 😬. Practically, on such a small piece of fish, this knife would probably work just fine 😃! And it is as sharp as the dickens! Go for it!

Agreed. My sole Shun blade developed so many chips over the years it looks like a serrated knife.
