You can do much better than this. Do not even know what this would be useful for due to lack of RAM. The processor is OK and the SSD is OK. If it were a Chromebook it would be fine.
Works fine for 1080p60fps YouTube, hundreds of tabs in browser handles fine (browsers pause and resume tabs to free up ram as needed) office tasks, some light creative work with a Lenovo stylus, etc. 4gb ram is fine for the combination of this price, ips full hd display, convertible with touch and stylus support, if it had 8gb of ram and a 300 nit display you'd be looking at an extra $100 on the price. Soldered on ram is how they can sell this so cheap at $329-400 depending on the sale. I'd recommend getting it at $329 if possible, but that sale point hasn't come back around yet. Also, a big point, display is not just 250nit, it's 250 nit average. Illumination level isn't as bright on the corners, it's 220nits there, but 280+ nits in the center. Inside, it looks almost as good as a 300nit display, but with a very slight vignette effect. Outside or in bright light is a no go. Does fine with artificialy lit rooms, just not natural light.

I looked for a few months for a 13/14 inch convertible with good speakers, touch and stylus support, enough power for 1080 60fps YouTube videos, as a replacement media device for my cracked Intel atom yoga book. Had to be under $400 because I'm not spending big boy bucks on it, has to be windows. I've been very happy with it, but I'm curious what I might have missed, what would you recommend over this?

At least 8GB of DDR. E-Bay has some refurbs for that price or used ones. Try to find one that has only been manufactured for less than two years. Or one with DDR you can add not soldered.
4GB might work if you did not use multiple tabs and were only having a single app open but it would always be a struggle.
