I've watched this guy's videos and I don't place much stock in anything he says. He's not a medical doctor, a scientist, or registered dietician. He's a chiropractor.

I happen to like Idahoan brand mashed potatoes and the 1st time I used a pack it amazed me how it poofed up when placed in water. I really thought it was amazing. I called the company and the man on phone told me they were dehydrated about 98-99% and so adding water to the pack (actually other way around) results in a rapid rehydration which looks like they poofed up. He told me I would love the dehydration processs as much if I were there to see it and offered to send me some product coupons and a week or so later in mail came literally like 40 coupons for a free product. We make them now an again when in a rush and cant cook ourselves. I have a few free products left in pantry. I imagine BC brand very similar
