Saturated fats are more stable. Because each carbon has two hydrogens attached. There are no double bonds.
Sunflower oil is a bad oil to ingest because it's already rancid. And breaks down further even more easily. It's polyunsaturated.
You want to be primarily ingesting saturated oils. They will be incorporated into your cell membranes. Polyunsaturated oils are damaged oils by the time they make it this far.
