I just bought the 256gb version of Mac Mini M1 for $599...

should I exchange it with Costco for this one? ($180 extra for the additional 256gb)

or am I better off buying a Thuderbolt 3 external SSD.(500gb for about $180 or 1TB for $300)

I would just keep yours. 180$ is insane money for a minor upgrade like that.

Also, don't get the external SSD until you know you're going to need it. They'll likely be cheaper when you do.

Usually I would agree with you that SSD would get cheaper later on. Right now though, with the chips shortage still looming, this might not be the case.

Yup, just paid full price and they flew my unit in on UPS from Shenzhen, China. Interestingly, though, Mac minis are made in Malaysia. To my understanding, the Apple store told me that the 16GB ones are custom so they're generally tougher to find in stock.
