Does this game or Origins or Odyssey have huge improvements for XBSX, or just the better loading times and better FPS?

Valhalla is more like the older style assassin's creed to me. The enemies aren't as "spongy" in Valhalla as they are in Odyssey. The biggest thing I personally did not care for was the notoriety system in Odyssey. Valhalla doesn't have that. I picked the game up for $10 from gamefly a few weeks ago and it was the best $10 I've spent on a game so far.
