That's the allergy disclaimer line. Basically stating there is a chance some coconut aroma or dust might have wafted into a bottle or two. This protects them from tree nut allergy law suits.

I personally LOVE coconut, so yes, my disappointment in the ingredient list may have shone through.

There are certainly many potential uses, but like you, my main use would be for coffee. Cakes, pies, drinks, and smoothies come to mind.
I'm still on the fence after a google search. My go-to is their SF Hazelnut.
