Not a bad price, but why should I buy it in 2021?

If you were on the market for a NUC or a computer of similar size, you'd be hard pressed to get something with better performance/$. There's the 2018 Mac Mini i3 for $500 at Mac Sales and that's about it. Even the Skull Canyon NUC is still riding dirty around $600.

Baseline 2020 M1 Mac Mini is $699 and will blow an i3 out of the water. You're stuck with 8 gigs of ram though, whereas the NUC you can go to town.

Yeah it's a mixed bag, M1 RAM isn't upgradable and it's ARM rather than x86. It's hard enough getting some things to work on a Mac Mini x86 but a Mac Mini on ARM? Oof.

It's worth noting the i3 Mac mini has a full desktop class i3 in it, not a U series or a G series with a 15W TDP… and it doesn't thermal throttle. The i5 and i7 2018 Mac minis will thermal throttle under full load.
