I know boxed cake, pancake and muffin mixes aren't the healthiest but convenient. what I usually do is use a half serving of the box mix then add oat flour, protein powder, oat fiber ( 0 calories) to bulk it up. Then add egg whites, Greek yogurt, unsweet applesauce or pumpkin purée for moisture rather than using oils. So this makes it somewhat healthier ingredients wise.
