It warms and maintains the temp of the water bath to the exact temp you want your meat to be until the whole piece of meat can reach that temp.

Do you like your steak a little pink in the middle? How about the whole steak being cooked like that edge to edge? You can't really overcook things unless you leave them for hours longer than needed (then the proteins start breaking down). You can safely undercook things as well (pasteurization).

I use mine mostly for steak, thick pork chops, and chicken thighs. Perfectly cooked and juicy every time. Set it and forget it. I tend to buy food in bulk on sale then preseason and vacseal them in the right portions so I can throw it straight from the freezer into the water bath.

If you don't have a vacuum sealer plan on buying one. You can do it without but it's a hassle.

No you cannot reuse the bags. You can get a huge roll on Amazon pretty cheap. Or just use a zip lock bag if you don't have a vacuum sealer. Check YouTube for plenty of instructional videos. Sous vide everything is a good channel.

You can buy reusable silicon vacuum bags. I've never used them. Otherwise, no. The bags are not reusable. For me, the money I spend on bags is recouped by what I save buying meat in bulk and/or on sale. With ziploc you need to get freezer bags. Seal all but one corner then slowly lower the bag into water to displace all the air before sealing it. I also haven't bothered with this method as I already had a vacsealer.

The initial heating phase uses a decent amount of power I think. If you boiled some water to start at a higher temp then it would barely draw any to maintain it. I actually bought an electric kettle just to speed up the process when I'm using my larger waterbath (8-10 steaks at a time).

Do NOT buy the LG fridges. They are beautiful but when I purchased one they told me LG is 2 to 3 months behind on shipping due to part shortage. I had to cancel my order. Luckily I might of dodged a bullet because I hear LG has major problems with the compressor in their fridges. Something about a plastic piece inside that almost always fails.

Anyways, I ended up buying a GE profile fridge. Very comparable size wize to the LG but slightly more expensive. However, the stock is good and quality is good. Highly recommend!

They definitely do go on sale. I bought them on sale last time and there is no comparison between it and Cascade. Dishes cleaned with Cascade came out super clean with no residue. Dishes cleaned with the Kirkland brand always felt like there was a coating on the surface and some dishes would still have some food residue leftover. I switched back to Cascade after using up all the Kirkland and haven't had any problems since. Never buying the Kirkland brand again.
