Great deal and still available today. It's $10 less than this configuration as a refurb from Apple directly although there have been some used/open box units on eBay for about $90 less than the Costco price. Use Costco visa and get extra warranty.
Yes, 8GB should be fine for most applications. I have a MacBook Air with 8GB and a mini with 16GB. For most things I don't notice a difference. You may get some swap paging with many apps open or many browser tabs etc but considering this one is the 512GB model it should have good swap speed and durability for that.
