For <$100 the Oster Expressbake Breadmaker, 2-lb at $79.99 on Amazon seems the best reviewed. If price is no object, the Zojirushi models Home Bakery Supreme 2-Pound or the Zojirushi Home Bakery Virtuoso Plus are the best bets.

You are assuming that the recipe is correct or that your measurements are exact. Humidity and other local conditions will affect the mix as well. If you are needing to manually mix in the additional water/flour, that is on your bread machine. Within a minute of starting a batch of pizza dough, I can tell what I need to add, either water or flour. I have a double paddle machine, so I trust it to mix the additional ingredients. After a minute or two fine tuning the mix, I can leave the machine to do its thing.

I use a Hamilton Beach model #29887 purchased on super sale from Frys Electronics about 2yrs ago for $40 and it is actually better than my mom's $500 bread maker from William Sonoma. Mine has 14 different bread type settings while hers only has 8, and both are very consistent. It says my capacity is a 2.00 pound loaf but its more like 1.75 pound max otherwise the top of the loaf touches the top window during the final proof cycle and deflates making the very top of the loaf collapse and become concave in the final product. I just scale down my ingredients for a 2 pound loaf by about 10% and it works very well and makes very consistently good loaves. My friend has the best Zojirushi dual-paddle bread maker and our loaves are equally good. Mine just doesnt have an alarm or timer to allow me to remove the paddle before it starts the final proof and bake cycle so I had to sit next to it 2 different times for it's 4.25 hour cycle to figure out when the final keeding cycle finished so I could remove the paddle so it wouldn't make a big hole in the bottom of my finished loaf anymore. Other than that, it has worked great for me making about 25 loaves over the last 2 years. Just stay away from any bread machine that uses a plastic paddle because everyone says those crack/break after a year or two. I got this one because it was the cheapest one with an all metal design and I wasn't expecting much for only $40 but its about as good as my friend's $350 Zojirushi and my mom's $500 model so I'm very happy.

I have a Zojirushi bread machine with dual mixing paddles and I use a kitchen scale to measure all my ingredients to the gram. I used to have a single paddle machine and I would have mixing issues like you experience. The Zojirushi machine mixes everything correctly every time and my bread and pizza dough comes out perfect every time. Using the scale to measure makes a big difference in consistency and I would recommend trying that. The one I use is a $15 Amazon basics scale.

I have a Zojirushi but never got to using it, tried once and stays in cabinet, looking at comments motivated me to try again Can anyone please suggest the most basic elementary bread recipe. Any break type works and I can experiment along.

I've had in my head that I've wanted a bread maker for a few months now. I have no idea if this is the one to get or not, but I went ahead and ordered it. I'm not sure I believe the $150 price as it seems like nearly identical models from other brands ware in the $60-70 range. However, This is still a 20% + savings over those, so I decided to go ahead and get it. I'm hoping I actually use this thing, and it doesn't turn into something that just takes up space.

I picked up this book last year, though it was only $5 then. I probably tried a half dozen of the recipes before I found one that I liked and stuck with that one as the go to bread.
