Personally I use a FR620 for my runs, an Edge 520+ for my rides, and a Polar OH1 for heart rate monitoring. The OH1 also connects to my C2 PM5 for rowing, and it also connects to my Peloton. I can also connect the OH1 to my phone/iPad/computers for things like Zwift or TrainerRoad. This is probably the most universal type of configuration you're going to get.
If I had to replace anything, it would be the FR620, and I would replace it with a watch that can play music so that I can ditch my iPod, but that is not going to happen until the watch dies. It has been fantastic for me for years.
