So you can probably change the 8gb chip for a 16gb and end up with 20gb if you wanted. Vendors max memory is not usually a true limit. The soldered memory is 4gb.

- a lot of bad reviews, but you can return it
- ram is probably upgradeable, because 12gb is an odd size. I couldn't find anything with a quick search.
Decent.

from what i understand, only the first 8gb (4+4) will run in dual channel, and the remaining 4gb (0+4) will run single channel

Cause it's cheaper to solder on the motherboard, than paying suppliers for the SO-DIMM modules. Hahahaha
It's either 8 or 16, what's with the 12 !?! Hurts my brain a lot (what's left of it 😁)
Look at the specs of the CPU and you will see higher speed LPDDR than DDR in the specs.

Memory Slots One memory soldered to systemboard, one DDR4 SO-DIMM slot, dual-channel capable
Max Memory Up to 12GB (4GB soldered + 8GB SO-DIMM) DDR4-3200 offering
So to have dual channel you would have to go to 8GB. Not so sure you could not insert a 16GB SO_DIMM and get 20 GB.
This would have been far better if the 8GB was soldered.
